Change photo print size using Epson printer with iPhone 15 Pro Max
How do I change the paper size from letter to a smaller size when printing photos from my iPhone 15 Pro Max to my Epson 2700 printer?

Do you have the Epson Smart Panel application? That's what I use when I want to print a photo and using the app, you can change the paper size for the photo you want to print.
If you don't have this app, open the Photos App. Choose a photo you want to print. Tap the box with an up arrow. Scan down to Print, then choose paper size and choose the size you want.
