But… Nobody knows what will or will not happen here, or what will or will not be mandated, or what will be litigated in court cases or for how long those cases might extend, or what cases may or will be upheld or overturned.

Be sure you limit data sharing with any hospital systems or care providers. I say this as a private practice owner and person with chronic illness.
Be very careful with your data and periodically go thru all your settings to ensure anything shared is on a need-to-know basis.

Be particularly careful about what third-party apps you share Health data with. Those apps may have vastly different privacy policies than Apple.
