I have a little problem with all the settings I was playing with, so I decided to reset the settings. It’s under general, the second last one I believe. If I reset all settings, will it delete my eSIM?

In the top of that page you can select which iOS version you want to view, which includes the latest iOS 18. The answer is still the same though, your eSIM will not be affected. Resetting all your settings does not affect any of your data at all. It only resets your system settings.
