My dad got a new phone number a few years ago and even though I updated his contact profile & deleted the old number, when I text “Dad” my iPhone still pulls up his old number, even though it’s no longer saved. How do I stop this from happening?

Does the message thread with your father date back to before he changed his number? If so, try deleting it.

Please review the Apple Contacts app and make sure old numbers are deleted and the current number is correctly labeled. It’s also possible your father created multiple contact cards. You’ll need to do a search and see where the old number displays and update or delete.
Try opening the phone app. Tap Contacts and see if by chance the contact is duplicated there or the old phone number is still stored there. It shouldn't be, but it's worth a shot.
There’s only one contact card for him and the old number has not been on it for quite some time yet. My phone still continues to pull it up for text messages. It’s very strange
Have you entered the old phone number in the Contacts app search field? The only entry is the contact card you created for your Dad?
Have you tried searching your emails for the number?
I double checked this , there is no duplicate and the old phone number is not there
