You can't use the phone itself to check your blood pressure or your blood glucose.
There are blood pressure cuffs that will link with the Health app. I have one by Omron that seems to work well. For glucose, you'd either need a continuous glucose monitor with an app that syncs to Health, or you'd need to enter the information into Health manually.
If you have an Apple Watch, there are apps that will monitor your Heart Rate Variablity (HRV) which is often considered an indicator of stress. StressWatch is one I've used. You can also use the "State of Mind" function in the Health app to log how you're feeling.
And there are lots and lots of apps that will sync with health and analyze the data in various ways. You'll need to poke around in the App Store to see what meets your needs and budget. I like one called Heart Watch by Tanntsissa.
