I am doing an experiment in the Physics lab and it involves using high magnetic fields. I need to measure the field using a software on my phone (iPhone 13) but I need to know which sensor is used and what is the maximum intensity. Help I don't want to break my phone😢

Apple does not release specifications regarding the built in magnetometer. The magnetometer and accelerometer are used primarily for navigation and compass app. I doubt it’s intended for high magnetic fields.
Try contacting the developer of the app you’re using for measurements. They may be able to answer a few of your questions.
I, too, would doubt if the iPhone was meant to be exposed to extremely high magnetic fields.
Shouldn't your physics lab have dedicated field measurement equipment that is designed specifically for this use?
