When I try and take a screenshot of this effect, the colors revert back to normal. I haven't, knowingly, changed anything... that I know of.
This "solarization" occurs on vids, stills, text boxes...

Check Settings -> Accessibility -> Display & Text Size.
Amongst the settings here are options that affect contrast and colors, including inverting colors and color filtering for colorblind users.
No guarantee that's the issue, but it's the first thing that came to mind when reading this.
Go to Settings > Accessibility > Display and Text Size > Turn off Smart Invert, Classic Invert, and Color Filters. Then go out back to Zoom and turn off Zoom Filter.
