I am wondering if there is a way to find and use my stored signature when signing things in my patient portals. How does the iPad decide which documents it will suddenly be available for? I have signed many things, and only part of the time, does my saved signature apply itself. Most of the time, not.

Presumably you refer to the signature image(s) stored within your iPad's Markup Tools. As such, the signature tool is available wherever you can use Markup.
