The latest update has all sorts of things I don’t want. Just want incoming mail in inbox. By time received, not sorted and not from my send mail folder. Why mess up something that is working?

The inbox will only show incoming mail. It will never show outgoing or sent mail.
It may sometimes show a reply to a specific email at the top of that specific email.
Beyond that, what things don't you like. You can turn off Categories by selecting List view from the (...) menu at the top right.
