It’s super annoying. My work truck is my office and I would really love to stop taking screenshots of my radio.. why does Apple make things so difficult? I do not want screenshots of my radio. Please mac wizards. How do I fix this ?

Yes, CarPlay will take a screenshot of the car's screen in addition to the iPhone's screen when connected.
There is no way to my knowledge to disable this unfortunately.
An industrious user has created a shortcut that may work to delete all the screen shots though after being taken.

Or just delete it from the screenshot screen directly by swiping to it, and tapping on the trashcan icon.
You can also offer feedback to Apple and if enough people do, they may add a way to disable it.

Not sure what you mean. Car Play does not take screenshots of anything.
Your iPhone may take a screen shot if you press the up volume button and the power button together. That has nothing to do with CarPlay.
Perhaps if you explain exactly what is going on, and what happens that makes you think it's taking a screen shot, then someone may be able to advise.
when I have my iPhone hooked up to my radio on my car, I take a screenshot of my phone. It takes a screenshot of the car radio and a screenshot of my phone. I don’t know how that wasn’t clear, bro.
