How do I remove a ghost emoji stuck in my recent emojis on iOS 18.5?

That’s not an Emoji, but rather a Memoji.

Go to Settings > General > Keyboards > Scroll down to Stickers, turn that off. That setting will prevent sending stickers from the Emoji keyboard.

Try Settings > General > Keyboards > Select the Emoji Keyboard, remove it and add it back.
