I'd like to experiment with using Categories rather than List View to sort mail. The Email User Guide says go to the mail app, then Choose View, then turn on Show Mail Categories, but Show Mail Categories is grayed out (along with many other items). What am I missing?

The Mail Categories are only available for inboxes, not for the other types of mailboxes (Trash, Sent...) in your various accounts.
So, for the "All Inboxes" mailbox, or the individual Inbox for each of your accounts, the Show Mail Categories menu item should be accessible.
