I entered the screen time passcode a long time ago and I do not remember what email I registered it with so I’m trying to reset it

You need either the passcode or the Apple ID that was used when you enabled it. If you don’t have either you must restore the iPhone to factory settings, and don’t restore a backup; set it up as a new iPhone.
