The stem of the AirPods Pros needs to be pressed, not tapped.

Make and answer calls with AirPods 3, AirPods 4 (both models), or AirPods Pro - Apple Support

aippods pro tap doesn't answer calls I've reset my AirPods Pro and they still will not answer a call by tapping. Tapping doesn't control music either
