You may first want to ensure your iPhone has plenty of storage space for smooth operation.

To check Storage: Go to Settings  > General > iPhone Storage.

(An iPhone generall needs around 8 Gb free in order to do all you ask it to do.)

If an app on your iPhone or iPad stops responding, closes unexpectedly, or won’t open - Apple Support


NB: Seems the Mail app is one of the built-in apps that can be deleted (and restored) if needed.

Delete built-in Apple apps from your iPhone, iPad, or Apple Watch - Apple Support

NB: says:

"When you delete a built-in app from your device, you also delete any related user data and configuration files"..


and for how to:

"Restore a built-in app that you deleted

  1. On your iPhone, iPad, or Apple Watch, go to the App Store.
  2. Search for the app. Make sure that you use the exact name of the app.
  3. Tap the Redownload button.
  4. Wait for the app to restore, then open it from your Home Screen."
