Nothing has changed in my credit card information so why is it asking for an update?

You would never want to click a link in an email/message and provide any personal information. That would indicate it is a scam. Treat emails/messages as information only.
You verify your payment information on your device by going to Settings > [name on top] > Payment & Shipping where you would see a prompt to update that information if necessary.
Yes, there are many scams claiming your iCloud data will be deleted if you do not click the link in that message to provide the scammers your financial/account information. You can simply delete those or report if you wish.
