You cannot. iOS 16 and later are never coming to the iPhone 6s Plus.

The iPhone 6s Plus can only be updated iOS 15.8.4. This iPhone does not support iOS 16 or later.
The "latest iOS version" for the iPhone 6 Plus is iOS 15.8.4. No more updates are available.
You probably already have this, but you can check as follows: Settings > General > Software Update
