My understanding was that now in photos there is a new feature to remove objects from a photo and that it downloads automatically. It is called 'Clean Up'. I have an iPhone 14 Pro Max with ios18 - how can I get this function?

It's part of Apple Intelligence! It requires an iPhone 15 Pro, iPhone 15 Pro Max, or newer. Your iPhone 14 Pro Max doesn't support it.
