Many clear plastics can yellow when exposed to high-levels of UV light for extended periods. Very often, clear plastics have additional surface treatments/coatings that both act as hard-coat to protect the plastic surface from minor surface abrasion - and filter UV light to reduce the effects of yellowing/aging.
As for whether Apple's own clear plastics suffer from yellowing, I have not myself encountered this issue. When protected from physical damage, you can reasonably expect your Apple products to retain their cosmetic appearance for their anticipated usage lifespan.
