First......iOS 17 is no longer available, so no iPhone can be updated to iOS 17 either manually or automatically.
Next.....even if iOS 17 was still available, your iPhone 8 Plus would not be able to run it. It does not have the processing power required to run anything higher than iOS 16.
So, your only iOS update path at this would be to buy a new iPhone. It would make sense to make sure than the phone will be able to run iOS 26, which will be available in the fall. If you go with an iPhone 15 or iPhone 16 version, those models will receive updates for the next 7 years or so.
