i have an iphone 15. i record video. if i use a 3rd party microphone with 2 mics, will the phone pick up additional people. will the phone 15 pick up other voices when using a 3rd party microphone

The iPhone 15 would likely process the audio signal as provided by the external microphone. If your third-party microphone has two mics designed to pick up multiple voices, then yes, the iPhone should record those additional voices.
I'm not sure how to answer your question. Microphones aren't particularly discriminating, meaning they'll pick up pretty much what sounds are present when the microphone is on. The built in microphone on your iPhone has a voice isolating option, which tries to block out external sounds when on a phone call. I suppose there are 3rd party microphones, which offer voice isolation, but you'd have to check with the manufacturer of the 3rd party microphone.
