You yourself cannot track the phone with eSIM, or SIM for that matter. Your carrier can, but normally they will not help unless it is a case of a missing person or similar emergency. Even then, the carrier will require a court order to act.

If the phone is off, there is no way to track the phone using cellular.

But, when you power off the phone, it still sends out a very brief intermittent Bluetooth signal that can be picked up by another iPhone, iPad, laptop, etc and the signal will be forwarded to the Internet. The device picking up the signal from your iPhone must be very close to the lost iPhone......less than 25-30 feet away.

See if Find My can locate the phone. If you see a message of No Device Found or Offline, you will have to keep trying a few times each day.

Use Find My to locate your lost Apple device or AirTag - Apple Support

Unfortunately, if the phone was stolen, thieves will wrap aluminum foil around the phone or place it in a small special type of bag that will not allow the phone to send or receive a signal.

If you have not been able to locate the phone after 5-7 days, you have to be realistic about things. The phone is gone.

Here is what to do: If your iPhone or iPad was stolen - Apple Support

You may get a call or text message from “Apple” or ”police” about a found iPhone, requesting you prove your ownership by providing your Apple Account and password. Don’t. That’s the thief.

As for tracking, if the iPhone does not show up in Find My, you can’t track it.

Troubleshooting a Stollen Device:

Secure your Account:

Having been stollen, secure your account.

A. Verify Your Devices:

Verify that your the devices logged in to your account or officially yours, by using this link: Check your Apple ID Device List to See where you're Signed in - Apple Support

B. Consider Modifying your Credentials:

Having been lost, someone likely or may have your credentials. So, by all means, consider modifying them, starting with a new Apple Account password.

C. Locating This:

Apple doesn't trace what travels from where to where, through use of Find My. But, third-party applications might. Go here: https://www.icloud.com/find. If using a third-party app (i.e. LoJack by Absolute Software), then log in to that site, seeing if you can locate it.

D. Never Getting this Back:

If you are certain your would never get this back, then you can erase it with Find My, if set up. For future reference, you can use the Apple Configurator to create a message that shows up on your Lock Screen that can contain information such as how about how to contact you regarding this iPhone. So, if back in your possession, consider that, if not done already.
