dock & menu bar not showing in full screen even when hover

Did you try shutting down and restarting the mac? I would certainly always do this after a point update.

On the fly you can try relaunching the Finder icon holding the Control Option keys down

Does a quick disk repair before it fully boots up, and certain system caches get cleared and rebuilt, third party system modifications and system accelerations are disabled temporarily.

Login and test. Reboot as normal and test. Caches get rebuilt automatically.

I would reinstall the macOS 15.6 on top of your existing macOS and compare your results.
