Well, I hear the Air Tag 2 are out but no one can confirm at the store when I go to buy one if it an Air Tag 1 or an Air Tag 2 and I don't want the Air Tag 1. How can they tell the difference.

I suggest that you wait until Apple makes a public announcement for any of their products. Whether or not, they will come out with a newer model of the AirTag is nothing anyone here, nor any store can tell you. Even Apple employees cannot tell you until Apple officially announces them.

As of now there is only one AirTag model. We do not know anything about any possible future productions.
