My question is similar to others, but the info bar at the top of the screen, such as time, carrier, signal strength, battery status etc, either side of the forward facing camera.
Is it possible to change the colour, & or fonts of the displayed info, and if so how?

No, you cannot change the color or fonts in that bar. You can let Apple know this is something you'd like to see in a future update here --> Feedback - iPhone - Apple
I choose wallpapers with dark backgrounds for my iPhone as using a light colored wallpaper, can certainly make it challenging to read.
