I don't believe that Apple usually publishes that information.

You might find information in the MacTracker database, but you would need to be more specific about which of the iPhones and iPads that use the A16 chip you were interested in. They don't appear to all have the same core count.

I stand corrected. It looks like Apple did publish the CPU, GPU and Neural Engine core counts - at least in the case of this iPad.

The MacTracker database adds a bit more information as to the breakdown of the CPU cores (performance versus efficiency) and the amount of RAM.
