I just made order for a phone and an iPad and paid with my apple pay. I realize after that payment that the shipping address is my old address. Am I able to change the address to my current one?

Possibly. You'd have to call Apple at 1-800-MY-APPLE. Changing the shipping address for your Apple Account won't affect existing orders, but is still a good idea so it will autofill the correct address on future orders.

I think the easiest things to do would be to try. I am guessing you can do it anytime before the item is actually shipped.
You're able to change that using your iPhone by tapping Settings > [your name at top] > Payment & Shipping, then scroll down to "Shipping Address".
