The app privacy report indicates that the health app which I never use keeps accessing my contacts! Why?

You don't give permission for Apple apps to access other Apple apps. Permissions are only used for third party apps. That is why the Phone app will show a name of a person in your Contacts instead of just the phone number. You also cannot stop that. The Mail app will show the name of the person instead of the email address and Messages will show the name of the person in your Contacts.

There is no way to prevent one Apple App from accessing other Apple apps. However, none of that information leaves your phone so there is no privacy risk.
That was the comment on that page, they should explained that this doesn’t apply to the system apps.

No apps! I had a friend in my garden :)
following that YouTube started showing me advertisements around the same subject!
A number of my friend seems to have the same observation
how to delete health app or stop it fro accessing my contacts!
