Updated to Tahoe today, as a French speaker I often use accents when typing. Unfortunately long-pressing letters such as "e" to get "è/é/ê" was made very complicated when typing on a white background:

With further investigation, this appears to be a bug related to background color. If the background is dark, the bubble stays black. If the background is white, the bubble turns white but the text remains white. New Safari window, Google search box field:
Dark theme ON
Dark theme OFF
I am seeing this as well. In any given window, the first time a long letter press is used the bubble starts black with white letters but the background immediately fades to white (and the letters remain white). The second time a long press is used in that window, the bubble starts and stays white (and the letters remain white).
This happens in Safari (e.g. in this dialog box I'm typing this post), also in MS Word, for example (same behavior, starts black then becomes white and subsequently starts white, open a new document and the same thing happens from the beginning).

not seeing the issue... Have you shut down and restarted more than once(?)
