Since iPadOS 26 the size of columns in Mail is either too big or too small.
In standard-view the size of the Mail itself is so narrow you cannot read it. Or you make columns so narrow, that you cannot read either the folder or the "Sent from".
When you select "more room" in preferences you can see most things as used to, however the typo gets so small you can hardly read it.

You can collapse the Folder-Overview, that gives at least an overview of the e-Mails so that you can read it at all. Not very satisfying, but a valid workaround.
I think the question is how can we get mail to behave like it was before iPadOS 26. I have the same sort of complaint. Now there is only one way I have found to expand an email to full screen and that is to double tap it. But that brings its own problem because I cannot find a “return” button. No Cancel, Exit, Done, etc. the only way I found is to tap the reply arrow, then cancel your reply.
