I used to be able to block email addresses on my iPhone 13 by just clicking on the sender's address and toggling block. Now there is a convoluted, time consuming, annoying process. I get A LOT of spam and this makes me want to change to an android phone. Anybody else?

No. It really isn't all that difficult to open the email that has the contact that you want to block. Tap the contact at the top and tap View Contact Card. Then tap Block this Contact.
