How do I remove unwanted third-party app from the menu bar in settings?

Typically you can hold the Command key and drag them off

if it is in the list of Log-in Items, remove them from that list

It did for me. I use a package tracking app and the developer released a replacement version for Tahoe. After upgrading macOS and installing the new app, both the old and new versions were in the Allow in Menu Bar list. Now (a few days and a restart later), the old one is gone from the list.

Those lists are not references to the actual applications, but merely a list of names to compare. It may clean itself up after time, but I doubt it.
