As Jeff correctly advises, you cannot remove iOS 26. But if your phone is having issues with iOS 26, the issues you've described could be caused by a battery which might need replacing in your iPhone. Open Settings > Battery > Battery Health - what does it show there? If your battery health is near 80% or lower, the useful life of the battery has been spent and it would be time to pay Apple to replace the battery in your iPhone.
