The physical SIM on my phone is locked to a carrier. Can I remove that card and then just use the ESIM with a different carrier? Can I actually use both at the same time with different carriers?

No, the entire phone is carrier locked. The only way you can use another carrier is to get the phone unlocked. And the only entity who can unlock the phone is the carrier it is locked to. If you are not their customer, they aren't obligated to help you, but it's them you need to contact.
