I'm looking at buying a new phone and trading my old phone in, i can collect my new phone from store, but do i have to trade-in my old phone when at store or can i do it another time after i transferred my stuff to new phone by posting it ?

What store are you thinking of purchasing it from? Most Apple Authorized Resellers give you 30 days to send in your older trade-in device.
