Restoring iPhone to a specific backup date

Unless you made a specific "Archive" backup on a Mac or PC and saved the file with a specific date, you won't be able to choose a previous backup because normal backups overwrite the previous backup.

Do you recall making specific "Archive" backups?

In addition to what Bob Timmons correctly suggests, if your goal is restore your phone back to the iOS version it was before you upgraded, your backup doesn't contain the iOS version, nor can you go back to a previous version.
