I want to turn on tracking on my iPhone. But that doesn't work because I don't meet the minimum age, I'm 37 years old. How can I solve this?

Do you mean the Allow Apps to Track setting? First check your Apple Account age and make sure thats correct. Settings > [your name] > Personal Information > Birthday. It can't be enabled if it's set to below 18 or the age in your country/region. There are also a few other circumstances that the feature won't work aside from age.
