Signing in to my new iPhone and my phone number didn’t transfer

so I got a 17pro and it took many many tries to get my old 14 to shift over the data completely. But when it finically worked my old 14 signed out of the data provider and my phone number. Now I have no devices signed in for this number and no cellular data. I have no idea how to fix this and get my old phone number back onto my new phone. I have tried adding it to my Apple ID but since nothing is signed in the verification code can’t be read. Everything else from my old iPhone transferred and works, except the data provider and my phone number.

Try going to Settings > Mobile Data.

Check if you can see an inactive eSIM there, also remember to check if you have entered your eSIM's PIN code. Without the PIN code, the eSIM cannot connect to the network. However, it is also possible that your eSIM does not have a PIN code, and then it should just connect to the network.

But if that does not happen, then I would simply install a new eSIM. Fortunately, it is often quite easy, as you only have to scan a QR code from your carrier. It is difficult to guide what exactly YOU should do, as the different carriers have different procedures. But often you can log in to your personal page with your carrier, and simply request a new eSIM. Then you will be presented with a QR code that you scan with your iPhone, and then it automatically sets up the connection.

If it does not happen like this with your carrier, then I would simply recommend contacting them and asking them for help with setup.
