I’m trying to update my Face ID because it doesn’t work half the time and I lost a bunch of weight so was going to update my Face ID but I no longer have the option in my settings menu.

Katana-San brings up a great point. Go to Settings > Screen Time > Content and Privacy Restrictions > Scroll down to the Allow Changes section and make sure Passcode and Face ID is set to allow.
