An intermittent difficulty may have to do with the strength of your cellular or wi-fi signal.

If you haven't already, you may want to update the iOS version to iOS 26.0.1

You may want to check that nothing is blocking the microphones:
(Eg: a speck of dirt or wax, or a cover etc,, or even your hand or a stray finger).
"Search Assist" says:
"The microphones on the iPhone 16 and 17 models are typically located in several places: one is at the bottom edge near the USB-C port, another is at the top of the screen near the earpiece, and additional ones may be located near the camera array on the back. This arrangement helps with various functions like phone calls, video recording, and noise reduction"
