Settings > General > Keyboard - Keyboards - remove whichever keyboard you don't want.

You can add and remove keyboards here:

Settings > General > Keyboard > Keyboards > tap edit, and select the one or ones you want to remove.

What doesn't work?

Normally in the menu you will be able to see the keyboard you normally type with - often with the language you normally use, and then there is the Emoji keyboard. In addition to that you can add or remove other languages.
