Remove adult son from family sharing - email?
If I remove my adult son from family sharing will he still retain his email address which is an @iCloud.com address?

Yes. The only thing he will lose is the ability to be part of purchase sharing and to have purchases potentially charge to the Organizer's account. If somebody in the family has a family level Apple service such as Apple Music, Apple One, or iCloud+ he will have to get his own if he makes use of those services.
