How to delete Health app data and unpair Apple Watch on iPhone?

I would like to delete the health app on my iphone or more importantly the data as it is taking up a huge amount of storage. I have unable to find instructions to delete the data efficiently. If I try to delete the app, it gives an error message saying that I need to unpair my apple watch from it first by going to the watch app on my phone. I can find no where to unpair my apple watch from the health app.
