Hello, I created an apple account with my email and with a phone number which I don't have access to it anymore, and also the email is not verified on that apple account , how can I free my email to create another account with another phone number?

Until that account is deleted from Apple's system (which can take Apple a long time to do) and 6 more years pass, you cannot reuse that email address for a new account.
I don't know what you mean by the email address ("email" alone are the messages you receive at an address) is not verified. You have to verify it as part of setting up the account which you were apparently able to do.
