Check if you have entered your PIN code for your eSIM. Often SIM cards and eSIM have a PIN code that must be entered after the phone has been turned off or restarted. If the code is not entered, you will not be connected to your carrier's network.
Enter the PIN here:
Settings > Mobile Service > SIM PIN
If it is not due to the PIN code, contact your Carrier. You may need to reinstall your eSIM. This is absolutely not normal procedure after an update, but it can happen.

Did you already force restart your iPhone?
If it does not work after that, you will have to contact your carrier about that.
