My iPhone will not connect to my watch during activity, spinning, walking, other.

Do you mean you are not seeing your workout on the Lock Screen of your iPhone?
If so, on your iPhone, go to Settings > Apps > Fitness and make sure Live Activities is turned on. If it's already turned on, turn it off, restart your iPhone and turn the setting back on.
