Siri not working on 26.1 in English, but will in other languages

I have an iPhone 17 Pro Max running iOS 26.1, my phone did an automatic update last night. Prior to today, when I would say “hey siri” should respond with the “go ahead, yes, mmhm” etc responses. Now after the update when I say “hey siri” my phone just gets the wavy rainbow around the edges for AI and a low tone “chime/ding”. Restarted phone, changed all the settings to what YouTube videos and other discussion posts said. I switched language over to Italian (as I can speak a little), and when I’d say “ehi Siri” she would respond in Italian and I wouldn’t get the rainbow edge for AI and the chime/ding. When I switched back to English (US) it goes right back to the rainbow edge and a chime. Is there anyway to fix this issue? Got the phone on 10/30/2025 and it worked until the iOS 26.1 software update on 11/20/2025.
