How does someone who finds my MagSafe wallet get the email address or phone number associated with it? Do they have to try to attach it to there phone? If they are not aware of the feature of the wallet how would the information be retrieved?

When someone finds your wallet, they only see your name and contact information if the wallet becomes detached and they tap it with their iPhone (or other NFC-capable smartphone). That tap reads a small NFC tag inside the wallet and opens a webpage that shows the info you chose to share when you set it up in the Find My app. They do not see your location, Apple Account, or anything else—just the details you opted to display.
