When I use Siri to schedule a meeting, the default alert (e.g. 15 minutes before) is never set, and the meeting is scheduled with no alert. This only happens using Siri to create a new meeting; the default alert is set with all other methods of creating a meeting.

Tell Siri the alert explicitly
Siri will correctly apply alerts if you say them:
Example:
“Hey Siri, schedule a meeting tomorrow at 3 PM with an alert 15 minutes before.”
or
“Add an event at 10 AM tomorrow called Dentist and remind me 30 minutes before.”
This forces Siri to include an alert.
