AirPods Pro 3 microphone picking up external noise

I have just purchased the AirPods Pro 3 to use in conjunction with my iMac and MacBook Air however, have been listening to my call recordings back and the person on the other end of the phone can hear the echo in my room. It also picks up on other noises and my own voice sounds extremely far away.

Currently my AirPods are set up as:

Noise cancellation - on

Transparency - off on control center but on in settings? Will not let me turn transparency off in settings

Adaptive - off

Spatial Audio - says not available

Conversation awareness - on

Listening mode - noise cancellation (what I prefer)

Adaptive audio - slider all the way down to less noise

Microphone set to - always in left ear

In accessibility audio settings:

Headphone accommodations turned on

Optimisation set as - slight

Transparency mode settings :

Amplification - slider half way

Balance - slider half way

Tone - slider half way

Ambient noise reduction - slider all the way down

Own voice amplification- slider all the way up

Conversation boost - off

I feel like I’ve tried every suggestion on the internet but still, people on the other end of the phone still find it echoey, they pick up on every little sound and I sound far away despite the mic being in my left ear!

Help anyone? Am I missing something as it’s making these headphones feel like a giant waste of money and calls are painful!
